Best software program for recovering files from formatted Mac Journaled file format drives. Or should I take to pro?

In a really stupid blunder I lost 6 years of files and the HD got super fried. (Don't plug a new air conditioner into a computer power strip, Kids)

I recently got a Mac Mini m6 and have an external harddrive reader (a Terramaster)

BUT I saved the old HDs from my much older Intel mac. BUT it looks like I formatted them before removing from the computer.

I would like to recover the files that were there. I have not touched them or done any saving on top of them and unloaded them from the computer as soon as I saw they were blank.

What is the best software to do this, OR should I take it to a professional? If I take it to a pro it'll be 300 dollars per drive. TT I have 3 I need to rescue. That's 900 dollars... I rather not spend it on that, but if I have to, I will.
