Are you using another device for Apple Pay as well, for example an Apple Watch?

If yes, that device will show the latest transactions in the Wallet App.

Is it affecting all your credit and debit cards or just one card? Have you changed any privacy and/or security settings? Installed any security or ad blockers? Is your iPhone updated to latest iOS version? Ask the bank if they changed services recently.

Transactions are anonymous to Apple. Neither the bank nor merchant shares any information. The map and approximate location of the transaction is provided by crowd sourcing geographical information from your iPhone, not Apple.

Transaction history is provided by the bank that issued the debit card. Do you use a VPN? A VPN can block the bank from sending your iPhone the transactions.
