Since you mentioned that you used Apple Pay with a card in your Wallet, I assume you started the subscription directly with Amazon where it would not be managed by Apple. Does the description of the charge on your card used show Amazon or Apple?
If it was Amazon, then you would need to contact them for a refund and would need to start the subscription again. I doubt they would be able to transfer a subscription from one card to another.
Amazon doesn’t accept Apple Pay. Who sent the receipt for your subscription? Was it Apple?
