I hope this post helps everyone with this issue.
The reason you're experiencing this is due to the way iBooks handles PDF files and there isn't a way to correct this as a PDF document...
However, if you can get the PDF content opened in Pages and save it as a ePub file, this will make the information act like an eBook, and thus it will support multi-page view.
Use Create ePub files in Pages - Apple Support to prepare your file and export it to an ePub file using Pages.

Would love to see this implemented. On OS X Lion, the Preview app allows this full screen, and it is magnificient! Hope it is available on iOS 5!!

Yes, tried this, but on an iPad Pro you have to go through some hoops to get there (save it as Word from Acrobat, import to Pages, export to ePUB, import to iBooks), however on the PDF I tried all the formatting was screwed, so it proved to be of little value.
I agree, that the two page view is essential. I feel the lack of PDF support in iBooks really stinks. Highlighting, copy, hyperlinks, two page view, search, and all the things an ePub can do should be available for PDFs hands down. I know a list of apps in the AppStore that allow these things, why won't iBooks?
Whatever reason Apple has for not supporting PDFs properly is hurting its customers, especially the business customers. I have to have different apps for storing anmare viewing my PDFs right now, when I know iBooks could easily be the best all-in-one on the market.
If you're listening Apple, please help your neglected PDF community!
Over two years later and they still havn't listened. Magazines just aren't as good when the pictures are broken up...

I don't think Apple has any interest in this. They don't accept pdf in the iBookstore and they handle magazines via apps in the Newstand.app. You will just have to use some other app.

Best work around I found for all of this is to download Evernote and just open the PDF in there.
It seems to work really well, plus it's a free app!!

I also need this implemented. I don't see how Apple will develop the pro segment without such basic things
