I just ran into the same issue. There doesn't really seem to be a way around this. Hopefully Apple can fix this in future releases.
The best thing for now you can do as an iPod Touch user is to create extra playlists in iTunes that contain the folders (playlist is: *folder*) that you want to be able to play on your iPod Touch.
Another thing you could do is create an on-the-go playlist on the iPod Touch. Except for individual songs, you can also add playlists to your on-the-go playlist (click on 'more'). It takes a bit of labor but at least it's possible.
Best thing is to keep using you iPod Classic of course ;-)
A simple way is to create a smart playlist on your iTunes and set it to include automatically all songs from the specified playlist. Call the smart playlist something like "all in that folder" and that's it. You'll never had to update it and you will be able to use it whenever you want to play all of your playlist within a folder.
It's not 'simple' if you have dosens of folders and subfolders that are sometimes added, removed or reordered :-)
At least, give it a try; that the most elegant way to use actual iTunes functions to do what you are trying to do. It will be more simple than waiting a feature that may never come (still, you can ask Apple using the feedback page).
Honestry, making a dozen of smart playlist will take you no more than 5minutes. Moving or reodering your playlist will not break the smart playlist. You can place it within your folder or in a seperate location.
