Go into the contact, press Edit on the top right, tap the picture and press Delete Photo. Press Done when finished to exit out of the edit contact mode.

Ignore my previous post, sorry. For contact pics in Address Book, highlight the card with the pic you want to delete, then go up to Card>Clear Custom Image.
