*THIS WILL FIX IT:* Go to your settings > general> date&time. Make sure the date is right. Then restore your iPod. You can just back it up and reload it with that image. You won't lose your app data or anything. Make sure you transfer items from your iPod to the computer when prompted. When it's done with the restoration, your icons will be back!

Note: If you have any time-sensitive apps, there may be issues. I have Doodle God and when I changed the date and time, the little timer for clues now says like 6000 minutes. Oh well, I shouldn't cheat anyway...

I had the same problem and stumbled upon this process. I don't know why, but it worked for me.

Connect your iPod and let it sync. Select (highlight) your iPod description on the left side of the screen under "devices", then select the "apps" tab (at the top of the main screen). This displays the available apps on the left side, and each of the simulated pages of apps on the right.
1) First, move the cursor over the white icon and click the black 'x'. This removes the white icon from the page. It also removes the check mark from the corresponding app in the list on the left.
2) Click the "apply" button in the lower right corner of the screen. iTunes warns you that this will remove the app from the iPod. Click "remove". The iPod will then go through the sync process. When it finishes, the app is removed.
3) Go to the available apps list on the left and check the box for the app you just removed. The app will appear (with the correct icon) in the simulated screen on the right.
4) Click the "apply" button in the lower right corner of the screen. This will re-install the app to the iPod. You'll notice that just before the sync completes, the icon will go white again.
5) Once again, roll the cursor over the white icon and click the black 'x'. This removes the white icon.
6) Click the "revert" button in the lower right corner of the screen. The correct icon will appear where the white icon used to be.
7) Click the "sync" in the lower right corner of the screen. When the sync is complete, the icons will be fixed.

I have had success performing this process on 1 white icon or many at the same time. Good luck!

Enginerd1: Thank you SO much for the solution! It worked like a charm! Seriously, I am so relieved... I can't find the words to thank you.

To all who read this forum in the future: I'd like to add k@mosaik's advice to the directions Enginerd1 gave us. Namely, make SURE you back up your iPod's data before following Enginerd1's directions.

It is a very quick process. Simply connect your device to your computer and open iTunes. Right-click on your device name, and select "Back Up". iTunes will back up all of your existing iPod information, game scores, app details/notes, etc. This takes less than one minute for iTunes to complete.

Then, follow Enginerd1's directions above. When you are completely finished with these instructions, right-click on your device name and select "Restore from Backup...". This will also take less than a minute. Once you have finished, all of your app data will be back. I've tested it with multiple applications and not only are the icons back to their normal state, but all of my data has been returned as well.

A HUGE Thank You is in order for both Enginerd1 and k@mosaik. THANK YOU both so very much... you've saved our skins! 😀
