It certainly is possible to transfer contacts from mobile phones to a Mac. The Mac has all the required functionality to accept contacts sent from thousands of phones. In 99% of cases it is as simple as going into the Phones contact list, selecting a "Send by Bluetooth" (or similar) option and off you go. The contacts are transferred to the Mac as industry-standard vCards which can be imported directly into the Mac Address Book.
You'd have to consult your phone's manual to find out how to send contacts via Bluetooth (assuming the phone itself has this feature).
You also have the option of "syncing" the phone with the Mac's built-in iSync program. Again, the phone itself has to have this functionality, and the phone's manufacturer usually provides an iSync Plugin to facilitate this for individual models.
