If it's not on the Gmail server, and you didn't back it up, you may be out of luck. Log on to your Gmail account, via a web browser, and see if it is still there.
Did you use IMAP when you set it up?

Gmail doesn't always place items in the trash, like other IMAP email providers.
This Gmail Help article: https://mail.google.com/support/bin/answer.py?hl=en&answer=86614 provides more details about the Archiving and deleting process on Apple devices.
In order to see the archived mail, you may have to show the "All Mail" label. This Gmail Help article: http://mail.google.com/support/bin/answer.py?hl=en&ctx=mail&answer=6576 will walk you through that process.
