Where are Notes Stored on Mac?

I use the Notes app on my iPod Touch, and it syncs to my Mac, but when I try to access the Notes on my Mac I can't find them anywhere. I can't find a Notes application or contents that would be in the file when I search with Spotlight.

Where are my Notes stored on my Mac?

My hard drive crashed yesterday and the Apple Store tech was able to back up my User folder before they erased my hard drive and reinstalled the OS. On the back up copy of the User folder, I don't see a LIBRARY folder?! Would that have been a hidden folder? I can't find my Apple Mail Archive folders either. That's a bummer because I took a TON of notes on my laptop. Are these files definitely gone now?

I read this whole thread but I am still confused. I see how to create a note in Mail. But I don't understand how to sync that with the Notes app on my iPhone, or any way to view Mail notes on my iPhone. If I need to use IMAP to do this, what and where is it? On the iPhone, on the Mac, or what?

I have a MobileMe account and have Notes set to be synced, but I don't understand what this does? What notes are being synced? I really would like to use them on my iPhone. I use the Notes app on my iPhone constantly, and I would really like to be able to sync these notes with my iMac and my MacBookPro.
