Itunes freezes and cores shoot up 100 percent

AMD 940 Black edition 3GHZ
CPU8MB G. Skill RAM
Biostar 8200 Motherboard
GTX 260 GPU
Windows 7 Ultimate 64Bit
Iphone user for 5 years.
Starting about 4 months ago when nothing had happened in a long time build wise to my computer I began having this issue. The issue being whenever I sync my Iphone 4 to my desktop it will stop mid sync. The iphone 4 will pull itself out of sync mode thus freezing the itunes process. At which time all FOUR cores on my cpu will jump up to 100 percent load and if left unchecked would fry my CPU.
Now I recently just got around to updating to 4.1 and created a backup. Attempted and then ran into this gem of a problem isn't that just ffreaking amazing. Anyways I am now sync'd to my laptop (same OS just a dell xps studio) and everything went dandy except for the fact I lost my backup of my phone (for some reason it won't let me migrate it over to a 4GB thumbdrive out of the appdata folder).
Does ANYONE know what's going on here and does anyone have a solution. I called Apple and unfortunately they had never heard of the problem.
