Is airplay useful without apple TV?

Yes. AirPlay can also be used with wireless speakers to stream music from iTunes.

You can also stream to an Airport Express, and other companies, including Denon, Marantz, B&W, and JBL, also either have AirPlay-compatible products now or have announced plans. Other manufacturers may join the party over time.
