When you sync your iPhone it should do all of this automatically. If not, when your iPhone appears in the iTunes control bar click it and check the settings as it should always take a complete back up. I back mine up to a mac, and when I do it automatically launches iphoto to transfer any images on there.
Or you can try other iPhone transfer

Are you talking about photos taken with/ saved from iphone?

If so, then open iphoto, connect iphone, import photos.

Photo library photos are only a one way sync -computer to iphone, as they came from your computer in the first place.
