Temporarily removing apps?

Connect your iPad to your computer, launch iTunes. Select the Apps tab. Deselect the boxes next to the apps you want to remove from the iPad.

Click the Sync button bottom right corner of the iTunes window.

Restart your iPad. Press and hold the Sleep/Wake button until the red slider appears.
Slide your finger across the slider to turn off iPad. To turn iPad back on, press and hold the Sleep/Wake until the Apple logo appears.

You can add the apps back in at a later date.

All your installed apps are located on the left side of the iTunes window on the left side under Library.

That is correct. If you don't want to go through those steps, you can just hold down the app until all wriggle, then click on the red 'X' on the icon. It will delete the app from your iPad. You can later reinstall from iTunes if you wish.

I think app data i stored with the app on the iPad. However, on the computer, app data is stored as part of the backup and not as part of the app. Therefore, if you deleted an app on the iPad I would expect the app data to also be deleted. You should be able to get the app data back by restoring the iPad from backup.

I havn't tried it so the following may be miles off the mark.

If you do a backup, remove some apps, continue using the iPad, then when you put the apps back on they will be empty of data. In order to get the data back you'd need to a restore (assuming that you hadn't done a backup since removing the apps in which the removed apps data will no longer be in the backup), in which case any data that had changed in the apps since the backup would be lost.
