Is there a way to disable the double click feature that sends an open window to the dock?

iMac 24", 3.06GHz Intel Core 2 Duo, 4GB memory, 23" Dell 2nd monitor, Mac OS X (10.6.5)

Yes, go to System Preferences > Appearance > uncheck "Double-click a window's title bar to minimize".
