Converting Videos for iPod Nano 5g

Hi, I have some questions and need some advice and would most appreciate any help anyone can offer.
My Goal: to convert videos/movies I have stored for my iPod nano 5g.
I want to have the best format possible for the best quality (size isn't that big of a deal to me)
Also, I want to have the best picture/sound for use in conjunction with t.v. out with the apple connector / component cable.
In pursuit of those goals, my questions are these:
What is the best software out there to accomplish this?
What is the best format and/or "settings for conversion" to use for the best output quality?
There are so many video conversion programs out there that I'm overwhelmed. Plus, I'm not sure which would be the best for this particular type of project.

Instead of reinventing the wheel, take a look at this Apple support document regarding videos and syncing to your iPod. It should be able to answer many of your questions.

As for video conversion software, several users (including myself) recommend the following:

Each of these is fairly straightforward and has excellent documentation to walk you through converting videos that would give you the best results for viewing on your iPod.
