how long should syncing take? 4G iphone

It is now about 3-4 hours since I started the sync today, the first in about a month. My phone says "Sync in progress" and iTunes says "Step 1 of 5 backing up" but no indication of the progress. Is it working? how long does it take? There is about 12Gb of stuff on the phone, but not all that is backed up in the Backup step is it?
What is the quickest way to back up only the changes since the last time I synced the phone? ie, what options do I check/ uncheck in iTunes on the Summary page for my iPhone?

There is no such option. After the initial backup is created for your iPhone, only changes with the data on your iPhone that is included with the backup are updated with the backup.

Are there a significant number of photos and/or videos in your iPhone's Camera Roll?

I'm having the same problem as well. My iPhone4 says "Sync in Progress" while iTunes is stucked at "Syncing XXX's iPhone (Step 1 of 2) Backing UP". It's been like this for the past 1 1/2 hours. Gosh!

Version iOS 4.2.1 & iTunes 10.1.1.4 (Both are of latest updates)

Phone is virtually new and NO DATA at all. Can anyone help?

UPdate to Jan7 post: I unplugged the phone, then tried it again. The sync then worked -- but I am not sure if it backed up or not. Phone is working fine.
Will report back after trying the Backup step again later in the week (left my USB cord at work, so can't do it this weekend! duh).
Yes, there were several video clips of 2 to 5 minutes long, plus about 50-60 photos.
