If you stop sharing does the problem go away? Rather than connecting your iPod touch to your Mac why don't you connect it to your wireless network directly? If you're sharing because you don't have wireless capability consider replacing your router/gateway with a wireless one.

Perhaps that's where the problem lies? You could try using something else? One that does not consume Resources the way this one does. Alternatively purchase a Wireless Router and use that instead.
