Missing iPod (or any default icon) 2011

Now with folders and tons of apps on our devices, is there any other method then doing a home screen layout reset or a full restore? I have a backup from 2 days back but would like to keep what has transpired and a home screen reset means all the apps that don't fit on the default 11 pages go 'offpage'. Yes, I can use Itunes and attempt to recreate my whole setup but WOW what a PITA.
