Why does iTunes censor explicit songs?

I just bought a DMX track (slippin) marked 'explicit' yet all the lyrics that contain swearwords are dubbed out with samples.

I'm old enough to think better of foul language in every day use, but it kinda ruins the song when i'm singing along 🙂

any particular reason why this is? or am i missing something that allows me to download the 'real' version of the song?

It's probably an erroneous designation from the record company. You can contact the iTunes Store Customer Service department using the form on their Support page (select the category and subcategory closest to the issue you're reporting and you'll find either an "Express Lane" button - just follow the instructions to get to the contact form - or an "Email Us" button) and explain your situation to them.
