With advice from another group, I am starting the whole thing back over from scratch by reformatting the entire array. -

Firstly are you wanting to start from scratch or make the previous san work?
If you want to start from the beginning
An easy way to fix this is in disk utility select the drives you want to be part of your san and under partition make it as free space
If you are wanting to make a previous SAN work you will need the old .cfg file to start with
