Replace Text - Can you specify "ALL"

I am trying to create a script to replace the names of a group of photos that are named different names. When I create a script currently I can specify what text to replace and it will do the action, but since all of the names are different I was wondering if there is a command to simply replace all text with the new naming convention.

Any ideas?

Macbook Pro 3,1, Mac OS X (10.6.6)
