I was just wondering how does iTunes convert the files?

Could you be a little more specific with your question? Are you trying to convert from one format to another> Just exactly what information are your looking for?
First of all, thanks for replying, I am doing a infomation essay on iPod Hardware and the processing file. So i guess what i mean by processing file is how does iTune convert the songs to fit into the ipod

Unfortunately, this is a user to user forum only. We would really wouldn't have any knowledge of the specific's as to how the software & hardware interface specifically since we are not Apple employees. I'm sure this is proprietary information that Apple does not make public. The other thing is any speculation that I might offer is just that specualtion, & specualtion is against the "terms of use" of these forums. Sorry!
