1. Checking for Updates. This is the most likely. Apple uses a vast number of servers and also the Akami distribution network to manage this task.
2. Checking with MobileMe for linked photos
3. Checking for Places information
4. Sending a sample of your DNA, credit card details, inside leg measurement etc back to the Mother Ship. Admittedly, this is the least likely.

Did you buy this on the App store because that's one of the app store servers. That would put number one in the frame again. But you know, the only people who can answer this question with certainty is Apple, so try asking them.
