I hate that it does that as well. When I first tried to change computers I lost everything.
Here is one way to backup your backup... it is located under
"C:\Users\*YOUR ACCOUNT*\AppData\Roaming\Apple Computer\MobileSync\Backup".
Before I do any upgrades or major changes I always backup up phone, than copy the backup file elsewhere and then backup again.
I use goodsync to copy these folder to a hard drive folder I call ITunes Backups
"C:\Users\*YOUR ACCOUNT*\AppData\Roaming\Apple Computer\"
AND "C:\Users\*YOUR ACCOUNT*\Music\iTunes"
This not only protects your backups but your configurations as well.

This is a recovery software for ITunes backup files. You can restore all or some of your old backup files.
