How do I remove App Update that I don't want?
How do I get rid of this thing telling me I have 1 update when I don't want it?

They should. It happens too often that an update is lousy and is universally panned by existing owners. Not being able to remove it from update candidates causes tedious single app updates forever after. I really want to use Update All and cannot.
Sorry, out of context. Apple should provide a way to eliminate an app from the Update All list.
I've been hoping to do the same thing and noticed that I have some hidden purchases in my account. To view these you need to go to Store > View My Account which will ask you to authenticate again.
Now you will see a page containing your account details and a View hidden purchases link where you can unhide them. So the question is how did they get in there in the first place?
If you click on the Purchases menu in the App Store you will see a list of everything you have purchased, the title of the application can be right-clicked to reveal a pop-up menu Hide Purchase...
Hopefully that should be enough to remove the app from the list of updates?
I have a similar problem.
I get the alert that an update, say for Xcode, should be installed. I install the update. After I have installed it, I still get the message that the update needs to be installed. Once I humoured the alert, and installed it again. Guess what, I again got the alert that the update needs to be installed.
Could it be caused because I have more than one account (with different logins of course) at the App Strore?
If I get no reply, I guess I will report it as a bug to Apple.
In this thread, and others, an important point that is being overlooked is that there are users of an App on different iPad platforms. Some newer versions of Apps may work on older hardware, but they simply don't perform as well, sometimes unacceptably poorly. If a new version offers no features of interest to a user, and they have no need for support for the developer, why would they upgrade?
I have a 3rd Generation iPad. Apple knows full well that its processor is slower than that in the 4th Generation iPad. I have an App (a translation dictionary from PONS) that's been updated recently, but having given it a trial, it's too slow to conveniently use. I went back to the previous version and will wait, probably in vain, for the developer to deal with the performance issue.
I've made a significant investment ($35) for the App's functionality and I'm not ready to give it up. It's a real nuisance to have the App Store believe I want an update in a case like this. I often update dozens of Apps at the same time, why do I have to waste my time selecting them one by one? It's silly.
Apple has been in the operating system business a few years now, and going back to the Mac days, they know that developers had to support more than one version of their software because, well, Apple themselves had to support more than kind of hardware. They should be able to allow users to toggle automatic updates on and off. They can even advertise it as a new feature the next time they upgrade iOS.
Had the same problem and accidentally updated an app. The update changed it significantly and I didn't want it. I discovered that if I immediately delete the app on the phone, then go to sync the phone on iTunes & select this app - it will re-sync the old version. Yay! Someone using the name LinKz on another thread described how to get rid of the update app badge.
I had this problem on my iMac. After looking for a result and not finding one I right clicked in the update description and a menu appeared saying 'Hide Update' clicked this and the annoying number 1 dissapeared. Don't know if this helps for ipad

right click on the sierra graphic or any unwanted update (ex iTunes 12.12) and select ignore

Go to: Settings > Storage & iCloud Usage > Manage Storage > Scroll to the app, click on it, and Delete App.
Go back to App Store, the app update will not be visible.

Hi. Try hiding the app in the app store. Find it under Purchased and swipe left to access the Hide button. Then, it might stop offering updates, hard to say.
