You have to go into Mail preferences and create a 'Rule" like so:

Other Linux email clients, have an "expire" function for each folder. It would be useful to have one for the Mac version.
Send Apple feedback. They won't answer, but at least will know there is a problem. If enough people send feedback, it may get the problem solved sooner.
