"Finishing sync" stage lasts forever!

If I haven't synced my 3rd gen iPod touch for about a week or so the "finishing sync" stage of syncing can last anything from 20-60 minutes, conveniently it usually does this when I'm in a hurry and wanting to sync only one tiny podcast. Does anyone recognise this issue? Is it normal and am I just going to had to stick it out or is my frustration warranted?

Also, sometimes the "Verifying iPod" stage comes up and this also lasts an indeterminate age.

The frustration both of these issues cause me is likely to give me a slight hæmorrhage of some sort.

imac 2.1 GHz PowerPC G5, Macbook 1.83 GHz Intel, iTunes 10, iPod Touch 3rd Gen 64GB, iPhone 4 16GB, Mac OS X (10.5.8)
