After that the apps will continue to load, but on the pages you will only be able to see in iTunes on your computer, but can still use on the iPhone using the search facility. You have a way to go yet...

I have around 400 apps and was wondering if they can all fit on my iPhone.
That depends on their size of course... some apps a 2MB and some are 2GB.

You can have eleven pages of apps, but you can also put apps in folders. Thus, 180 without folders, 2160 with folders. Max apps per folder is 12. You forgot about the potential of 4 folders on the springboard. That's visible apps, of course.MacBook Pro
