I take it you're talking about all the Aspect Ratio choices under Sequence Settings?

If so, the 2 HDTV settings - 720p HTDV & 1080i HDTV - correspond to the 2 broadcast standards for display: 1280x720 for 720p HDTV, 1920x1080 for 1080i HDTV.

The 3 settings for HD correspond to how the different HD recording formats store footage on tape...
HD (960x720) is how DVCProHD does 720p
HD (1280x1080) is how DVCProHD does 1080i
HD (1440x1080) is how Sony's HDV cameras do 1080i

(720p HDV - ie how JVC does HDV - is 1280x720, from my understanding, but I don't have hands-on experience with it)
