Mac OS X Desktop on Xserves vs Mac OS X Server

So I am doing a job for a company, a simple Xsan. Here comes the consultant GURU asking me do the following.


Install Mac OS X Desktop on Xserves instead of Mac OS X Server. I'm like huh? But I didn't talk back, I was a loyal doggy. Now I am coming to the boards asking anyone has anyone ever done this and if so where were the benefits.

I am feeling a little confused, I've done like over 60 Xsan deployments and never been asked this request, but I don't want to pretend I know it all so please help me.
