You say you are trying to eject Skype which doesn't sound right and sounds like you may be running it from the desktop.
Did you definitely install correctly - downloaded the app, expanded the downloaded file and then dragged the app onto your Applications folder? If Skype 2.8 is located there it would definitely be overwritten by the new version, prompting you with a warning that you're about to overwrite an older version.
Have a look in your Application folder and check that Skype is there, highlight it and do Command+I and that will confirm which version number it is. If you also have the Skype app on your desktop do the same to confirm that is the later version and drag it on top of the Applications folder. If it's not on your desktop it must be lurking in another location on your computer so in Finder do Command+F and search Skype - it should show you where they're all hiding.
HOWEVER, before you commit to Skype 5 have you read the negative press and had a look at the Skype forums which are full of vitriol about this hideous new un-Maclike incarnation of what is a great app?
Edited to add: If you're still having trouble deleting one of the versions you could try an app like TrashMe (
http://www.macupdate.com/app/mac/33863/trashme ) but it'll probably delete all your Skype files and you'll need to start again (that's what it did to me 🙂 but once I re-logged into my Skype account all my contacts re-appeared).
