Burning data DVD-R/BD-R - Mac vs UDF format

When burning a DVD-R or BD-R, what's the difference between Mac format and UDF format?

If I burn to Mac only, I likely lose the ability to mount on other devices (like Blu-Ray players)

If I use UDF, what features am I losing when I mount the disc on a Mac?

iMac 27" i7 (Mid 2010) / 8GB, Mac OS X (10.6.5)

UDF will be understood on any Mac that can play a DVD (which are all UDF-formatted). You can create a hybrid UDF / HFS+ format disk without a problem as well.

A disk that has only HFS+ data on it is readable only on machines that support HFS+ filesystems (Mac, and Linux and WIndows with additional software). A hybrid UDF / HFS+ is readable by just about anything that can read video DVDs.

The only things that HFS+ buys you are: longer file names, file permissions, and file attributes. If a hybrid disk is loaded on something that ignores the HFS+ data, then only the short file names are seen and the file permission and attributes information is ignored.
