I just did a routine update in Itune and my Iphone 4 basically died in the middle of it; all I have now is a photo of the iphone connecting to Itunes but Itunes won't recognize it, hard reset doesn't work, I am totally screwed.HP, Windows XP, Also Ipad, Sharp, Vaio and OLPC green laptops

What if I have Snow Leopard (10.6.7) and I have iTunes 10.2.1 and iTunes still says I have the most recent update for my iPhone (4.2.1)?
Do you have a 3G or 3GS?
iOS 4.2.1 is the end of the road for the 3G.3GS, iOS 4

My iPhone 3GS won't update to the current 4.3.4 its stuck at 4.2.1 and when i "check for update" in the latest iTunes on my Mac which is running Lion it says there are no new updates for this phone.

My best guess is that you have an iPhone 3G, not a 3GS. Because 4.2.1 is the most recent version for the 3G.
