In my case I do a sync, but after that, the Devices page doesn't show that I did a back up on that date.
For anyone reading this old post, please note that iTunes preferences only shows the latest backup; not the latest sync. Also, a backup is not done when sync'd over WiFi, so the latest backup does NOT necessarily indicate when the latest sync occurred. If someone has a real answer to this question, I'd love to hear it! UPDATE: On the iPhone, you can go to Settings > General > iTunes Wi-Fi Sync to see the last Wi-Fi sync. However, I have not yet experimented to see if the sync date is updated when sync'ing via USB.
As low_notes suggested, this works regardless of the sync method:
On the iPhone, you can go to Settings > General > iTunes Wi-Fi Sync to see the last sync.
