The total number of films that you can put on the iPad is really based on how much space each film takes up. I know nothing about converting DVD's since I don't convert them, but based on what I have seen with regards to movie sizes in the iTunes Store, HD movies can be 4GB so if each movie was that size you're looking at 14 films which would leave 8GB of space for some other apps, music, data and so on that you have on the iPad.

It's really simple math if you know the size of the movies. But again, I know nothing about converting so if it reduces the size of the movie, then you would the ability to store more.
