If you mean the passcode that is used to unlock the iPad then you can do so via Settings > General > Passcode Lock. If you've forgotten your passcode and can't unlock your iPad then you'll need to restore the iPad via iTunes on your computer (which will remove all content and settings from it).

If you can't remember the unlock passcode then you'll need to restore the iPad via the computer that you normally sync to : http://support.apple.com/kb/HT1212 (or see the iPad manual http://support.apple.com/manuals/ipad)/

If you can't remember the Restrictions passcode, then if it wasn't on the iPad when you last backed the iPad on your computer's iTunes then you can restore to the backup. If it was on that backup then you'll need to reset the iPad back to factory defaults
