Have you tried a reset ? Press and hold both the sleep and home buttons for about 10 seconds, after which the Apple logo should appear - you won't lose any content, it's the iPad equivalent of a reboot.

You also try closing the app completely :double-click the home button to bring up the taskbar; press and hold the YouTube icon on the taskbar until the icons start to shake; press the '-' in the top left corner to close the app; touch any part of the screen above the taskbar to stop the icons shaking and to close the taskbar.

If this is the YouTube that can with the app the best you can do is reset it but it can't be deleted. If you can't delete the YouTube from the App Store I suggest connecting your ipad to iTunes and deleting it from Itunes
