If you ask iTunes politely and humbly...
Or, on the Summary page of your device in iTunes, select "Open iTunes when this iPhone is connected."
If that option is grayed out, go to iTunes Preferences > Devices > and deselect "Prevent ..... from syncing automatically.
Now when you plug in the phone to the computer, iTunes will automatically open and the phone will automatically sync. However, when you close iTunes with the phone still plugged in, iPhoto won't open automatically.

Havin done what you sugggested, I find i does not sync automatically, but it also does not open iTunes or iPhoto. I did not want iPhoto to open, but did want iTunes (10.5.2) to open. How to make it work with this version of iTunes?
PS- asking nicely, even humbly, only gets a sneer!

This might work for you;
Plug in your phone using th eUSB cable. Next navigate to your Applications folder and open Image Capture. Now select your phone in the sidebar if it isn't already highlighted.
There should be a dropdown at the bottom of this bar that says, 'Connecting this iPhone opens:'.....

What is totally weird, when I connected via USB, it launched iTunes! Still I followed your suggestions, trusting iTunes will now open - I used the drop down menu to choose iTunes. Thanks.
