I have used other tablets and they don't seem as smooth to the touch... I know they all use Gorilla Glass, but the iPad seems to be coated with something to make it smoother, and I want to see if I can apply it to my other devices.

There are a number of 3rd party screen protectors available for other devices with some of them bound to include fingerprint resistance. I don't know of any that claim to be the same manufacture that Apple uses to purchase the spray coating.

I don't know what the closest 3rd party product is. I don't believe Apple publishes that sort of detail, but you can do a Google or internet search as easy as I can for a 3rd party film product that includes fingerprint resistance.
