go to file - new tab at the top or go to view- customize toolbar and drag the new tab icon to the toolbar to have easier access to it.

Additionally, if you want to open a link on the current page in a new tab (or window) where it doesn't do so automatically, then right-click the link (or ctrl-click if using a one-button mouse) and pick "Open Link in New Window" or "Open Link in New Tab" from the contextual menu that appears.


Finally, there are even more shortcut options you can set in Safari's "Tabs" preference item.
