how can I highlight text on Mail when I am replying to someone?

Do you mean you want to send messages containing bold and italic text?
You can do this in mail by typing the message, then using the mouse to highlight words, etc that you want to be in bold (or italic), then selecting from the Format menu > Style > Bold (or Italic).

no, i mean highlighting a text. like you would do so in an application like microsoft word

I haven't made any changes like that to my system and I can highlight any text other than addresses.

Just click on the text and drag across what you want to select.
highlight as in virtually use a highlighter, not highlight to select. its explained above
Ooohhhh. Select the text then press command-shift-c and select the color.
again, no. that changes the color i want to HIGHLIGHT the text

Highlight the text you want to highlight in Word.
Select all of your text in Word, do a copy (command +c) go to Mail, do a paste (command+v).
