Tagging in Mail 4.5

I want to tag a mail message easily so that I can filter it with smart mail boxes. The example is tagging a message with a project number so that it show up in my smart mail box. I don't want to have to type the tag in the message or subject area. I am trying to keep it transparent to the receiver. Any suggestions?
