As a follow-up to Graham, I don't believe you can change just the money symbol default setting (as you could do on a computer) to UK and leave the rest as US - it's all or nothing.

As well as Eric's suggestion (probably the easiest solution), you could add the English (UK) keyboard, by going to Settings > General and then either Keyboard or International. When a new keyboard is added, there is a globe icon to the left of the space bar: use that to change the keyboard. The £ sign on the UK one is where the $ sign is on the US one.
Yes, that is absolutely right, as with any of the keyboards, although I am not sure if the other symbols are that different between UK/US as they are with (for example, US/Thai). However, looking deeper, with the US one, the Euro and Yen can be found in the #+= part of the keyboard on my iPad, so they are there anyway
Go to the dollar sign and hold down your finder on it for a sec and the other options will come up.
