Unless you are a developer, you do not have access to IOS5 yet.
When it releases in a few months time (Apple have said "Fall 2011"), it will probably be an itunes sync with your computer. The computer then downloads the upgrade, verifies it, and then installs on your iphone.
Of course if you are a developer, you have the tools in XCODE to do this (I think), but beware, this might break your phone functionality as it is BETA software.

Update now! its free and fresh to the public...I one once had the chance to test iOS 5 in beta version so nothing new for me but it is amazing
Just plug your iDevice in to your computer, open up iTunes and make sure its the latest version "10.5"..
click on UPDATE on your iDevice page and let iTunes complete the magic..
Remember to back up first just incase anything happens..
Im making a fresh install to make the phone feel newer..
please dont if you still runs on ios 4 mate! you will regret it for the rest of your life cheers
iOS 5.0.1 has some minor and major bugs which mainly targets the iPhone 4s.
