The options you have presently are the ATI 5770 or 5780 cards from Apple.
Despite Apple's lack of commitment about whether those cards are supported in a Mac Pro 1,1 rest assured, they work fine. Since your PCIe 1.1 slots cannot run as fast as the latest Mac's slots, they will not run quite as fast as if you put those cards in a brand new Mac. But all the features will be there.
