I have had very little luck in locating books that I am interested in purchasing from the iBooks store. In most cases I have been able to find them in Amazon.
Has Apple made any public statements regarding its plans, if any, to offer a wider selection of books that could provide serious competition to Amazon?

Not as far as I know.
They have also never said anything about creating a version of iBooks for OS X, which is another reason to prefer Kindle, although everyone assumes they must be doing so.
Apple is continually negotiating with publishing houses to make books available in iBooks. The best thing to do is contact the publishing house that offers books you are interested in and see if they have plans to release in iBooks.
