I would like to use my IPad 2 in the field to do some note taking but I do not know if it is intrinsically safe to do so. Can someone please provide me an answer with a reference so I may show my boss?

The iPad is not certified intrinsically safe. You will have to buy a third party case from a company like Otterbox and then have the iPad/ case combo certified by a lab. A better bet might be a ruggedized certified intrinsically safe tablet PC - HP, Dell, and others have these.
There is a company out there who made the iPad explosion proof.
