I have a number of videos that were downloaded from iTunesU on my ipod that I cannot delete. They do not show up in iTunes. Neither are the videos in the iTunes library. How can I remove them from the ipod?

You can find the files in iphoto when your ipod is connected. Import the files (keep/edit/delete them afterward) and iphoto will ask if you want to remove them from the iPod.

The ipod video files do not show up in the photo section of iTunes. Any other recommendations?

Not sure what version you're running, but can you not open iPhoto (not a "section of iTunes") separately and do you see your iPod and its pics/vids there?
The ipod is running software version 1.1.2.
I am familiar with the Photos section under iTunes, but I don't think I have iPhoto on my Windows PC. Where would I find or download iPhoto?

There is no iPhoto for Windows.
Its normal if you removed videos from iTunes (or your PC hard drive) they wont be in iTunes but will stay on your device. This is only if you use manualy manage music and videos. If you use auto (sync) no videos in iTunes will delete videos on iPod after next sync! Thats all...
