Every time I make it using the following criteria, the playlist is empty. Criteria: Artist is Taylor Swift. I also have live updating checked. Any help would be greatly appreciated!!

That sometimes happens if the info has an extra space, or something else that you can't see but causes it not to match.
Try Artist contains Swift and see how it looks.

You could simply turn on the browser (iTunes menu View > Column browser) and select Taylor Swift.
If they are not showing up as Ed suggested because of an extra space, once you get all the songs, select them all, right click - get info and retype the artist name - Taylor Swift to correct it.
